This recipe has a wonderful kick with the red pepper flakes. Enjoy on a cool spring or fall evening!
What you need:
1 lb. Italian sausage, casings removed
4 C half and half
3 C cubed new potatoes
2 C low sodium chicken broth
2 C whole milk
1/2 tsp. oregano
1/2 tsp. red pepper flakes
1/2 tsp. ground black pepper
2 C coarsely chopped leafy greens (kale)
Crumble sausage in stockpot until brown, remove grease and discard.
Stir half & half, chicken broth, milk, oregano and red pepper flakes into sausage.
Bril to boil, reduce heat to simmer.
Simmer until potatoes are tender, about 30 minutes.
Season with pepper, stir in kale.
Simmer an additional 10-15 minutes until kale is tender.
