I'm a huge fan of okra and love finding new ways to prepare it. This recipe is so easy and most everything you need is at the farm stand. With 50 bushes producing and another 50 about to come on line there's no reason not to enjoy this summer treat!
What you need:
4 garlic cloves - smashed
3 Tbsp olive oil
4 c. okra (remove tops, halved lengthwise)
1 small onion (cut into wedges)
Salt & Pepper to taste
1 pint cherry tomatoes (halved)
Saute garlic cloves in olive oil over medium heat until golden. Add okra and onion; season with salt and pepper and cook until the okra is tender and bright, 10 to 12 minutes. Add cherry tomatoes; cook until just bursting, 3 minutes. Finish with a splash of cider vinegar.
