There's something wonderfully unpretentious about southern cooking! This is one of those recipes, shared with me by a new friend and customer. She prepared it with Natalie's Black Cherry organic cherry tomatoes. Pick up a pint and try it out, you'll be back for more, enjoy!
What you need:
1 (4 ounce) packet saltine crackers
10 cherry tomatoes, chopped
3 green onions, finely chopped
1 1/2 cups mayonnaise
1 hard-cooked egg, chopped
salt and freshly ground black pepper to taste
Mix tomato, onions and mayonnaise. Stir in the hard-cooked egg, and season with salt and pepper.
Coarsely crumble the saltines into a medium bowl, fold into tomato mixture and serve immediately (before crackers go soggy).
